Make Strawberry Bruschetta

A delicious, easy summer recipe!

I love this recipe because it pulls in the essence of summer. It’s always an unexpected treat when I bring it to someone’s house for dinner or a pool party. The ingredients are fresh, tasty, and oh so simple. Hope you love it!

What you need:

10-12 slices of baguette

4 tablespoons extra-virgin olive oil, divided

1 teaspoon sea salt, divided

1 tablespoon white balsamic vinegar

1/2 cup quartered cherry tomatoes

3/4 cup chopped strawberries

4 to 6 ounces of Burrata cheese, depending on your taste for cheese!

What to do:

Preheat the oven to 400°F.

Sprinkle half of the olive oil over the slices of bread. Then sprinkle half of the salt. Add the slices to a baking sheet and bake for 10 minutes.

In a medium bowl, add the strawberries and tomatoes. Add the remaining olive oil. Add the white balsamic vinegar and remaining salt. Mix gently to coat well. Let the mixture sit for 15 minutes.

Place slices of burrata on top of each piece of toasted bread and top with the strawberry and tomato mixture. Enjoy!

For an added summer touch, add some strips of freshly picked basil. :)
